Freezer beans

I love being able to save time and money with making freezer meals. Currently since I'm not working I have a ton of free time to prep for freezer meals, but when you're busy all week I suggest prepping on Sunday, since it's normally lazy day for most of us.
I save money by buying dry beans in bulk instead of canned beans and this seriouslly saves quite a bit of money. Just the other day I bought beans for $.56 a pound compared to $1.00 for a can of beans, this isn't a huge difference right away, but makes a difference in your grocery budget over time. 

My time is a very precious thing and I love being able to fill my time with doing what I love, cooking! Sometimes making the time for cooking up homemade meals isn't always possible so by freezing my meals and just heating them up this makes it possible to have a delicious home cooked meal all the time and no greasy fast food.

You'll start by putting 6 cups of beans in a big pot on top of the stove and cover with water until completely covered, then cover with a lid and soak 6 to 8 hours or overnight. When finished soaking cook on medium heat for 2 to 21/2 hours untill desired softness, I like to be able to smoosh them with my fingers. Get a 1 cup measuring cup and distribute 6 cups of beans into a freezer bag, flatten beans throughout bag and lay flat on bottom of freezer and freeze until ready to use.

I suggest thawing the beans out in the fridge overnight, and they come out perfectly. Normally I'd be scared of unthawing freezer food and be left with those annoying ice crystals, but they come out awesome.

One of my favorite meals to make is chili, so all I have to do is throw the frozen beans in a pot over the stove to melt them or defrost them in the refrigerator ahead of time. What kind of meals will you be making with your freezer beans?

Breakfast burittos

Freezer Breakfast Burritos: 
Serves: 7

Ingredients:
8 Eggs, scrambled
4 Potatoes, cubed
1 package of Sausage
2 cups Cheddar cheese
7 flour tortillas

Directions:
Whisk 8 eggs together, fry them in a medium heat pan with butter until fluffy. Set aside. Peel the potatoes and poke a coupe of holes in each and cook them in the microwave for 6 minutes or until soft. Set aside. Brown sausage. Mix all ingredients, including cheese in a big skillet until cheese is melted and add 1/2 cup of mixture to heated tortillas. Wrap the burritos and cover them with foil or some kind of wrap, and throw them in a freezer bag.

To heat:
Heat burritos in the microwave for a minute.

This is a perfect recipe for when life is just a little too much and you want to have quick homemade recipes ready to cook when you get home. I really love making freezer meals.
